Meal prep storage
Best eaten fresh, can be stored in a sealed container in the fridge for up to 2 days.
Ingredients
2 packs Acai puree
6–8 Strawberries
1 Banana
100ml Coconut milk
1 tbsp Honey or syrup (optional)
1 Banana (for topping)
1 handful Granola (per bowl, Click here for my homemade Granola recipe)
10 Cherries (per bowl)
1 tbsp Chia seeds (per bowl)
Method
Prepare the Acai, in a blender add banana, strawberries, coconut milk and Acai. As the Acai is frozen, I take it out of the freezer and let it warm slightly so I can break it into bits to add to the blender. Optional to add the sweetener in here. Blend until to a smooth texture.
Pour quarter into a bowl. Then top with the cherries, banana slices, sprinkle on chai seeds and granola. You can switch up the toppings to your liking, I often use up left over fruit. In the winter you can add dried fruit instead of fresh. I also like to add chopped nuts.
If you are storing it for another day, keep it sealed and in the coldest part of the fridge, for 2, max 3 days. Prepare the topping fresh each day.
Enjoy!
