Meal prep egg & chive breakfast bagels

Meal prep storage

Keep the egg patties sealed in the fridge. Each morning toast your bagel and add the egg filling. This keeps the bagel from getting soggy.

Ingredients

  • 8 sesame bagels

  • 10 eggs

  • 200g skyr

  • 20g fresh chives

  • 10 cherry tomatoes

  • 2 tbsp wild garlic pesto (optional)

  • 1 tsp salt

  • 1 tsp ground black pepper

Method

Preheat oven to 190 degrees C. Line a baking tray with parchment paper.

Crack the eggs into a large bowl. Finally chop the chives. Chop tomatoes into small pieces. Add chives, tomatoes, skyr, pesto, salt & pepper to the eggs and beat the mixture until ingredients are well combined.

Pour into the lined baking tray and bake in the oven for 25mins or until fully cooked. Use a toothpick or knife to insert into the center, if you pull it out without any of the mixture sticking to it, it’s ready.

Leave it to cool on the side. Cut into 8 bagel sized patties. Seal and leave in the fridge for up to 4 days.

To make, toast the bagel and fill with the egg patty. You can also heat the egg patty for 30 seconds in the microwave.
