Meal prep storage
Store in an airtight container in the fridge for up to 2 days. Pro-Tip: Place the avocado pit (pip) in the container with the dish to help slow down oxidation and prevent it from turning brown.
Ingredients
2 large ripe avocados
1 large tomato, cored and finely diced
1 small red onion, finely minced
2 cloves fresh garlic, crushed or grated
1/2 bunch fresh coriander (cilantro), finely chopped
1 lime, juiced (approx. 2 tbsp)
1/4 tsp ground cumin (optional)
1/2 tsp salt (or to taste)
Method
Put the avocado in a bowl and mash it into a paste using a fork. Add the lime, crushed garlic. Finely, chop the onion and tomato and add with the avocado. Finely slice the coriander and also add to the bowl. Using a fork smash everything together and mix around so the ingredients combine throughout the dish. It’s up to you how smooth or lumpy the guacamole is. Add a good pinch of salt and the cumin.
It’s ready to serve, I serve mine with tacos, tortilla chips, vegetable sticks and much more.
Tip, keep the avocado pip and if you have leftovers, put the pip in with the guacamole and wrap the bowl with clingfilm, this helps to stop the dip from turning brown. Store it in the fridge. Enjoy!
