Fresh tomato salsa (Pico de Gallo)

Perfect as a dip for tortilla chips, to drizzle over tacos and fajitas or as a salad side dish. This simple and easy salsa is ready in minutes. Show off your culinary skills at your next BBQ or taco evening! Feel free to adjust the flavours, adding more spice, garlic or citrus to your liking.

Ingredients

  • 500g fresh tomatoes (approx. 4–5 medium), cored and finely diced

  • 1 medium red onion, peeled and finely minced

  • 2–3 fresh chili peppers (jalapeño, red, or green), deseeded and minced

  • 30g fresh coriander (approx. 1 large bunch), leaves and tender stems finely chopped

  • 1 lime, juiced (approx. 2 tbsp), plus extra to taste

  • 1 pinch ground cumin

  • 1/2 tsp salt (or to taste)

  • 1/2 tsp freshly ground black pepper

Method

Finely chop the tomatoes into small squares and place them into a bowl, do the same with the onion. Thinly slice the chillis either removing or keeping the seeds depending on how spice you want it. Finely chop the coriander and add everything into the bowl. Add the lime juice and a good pinch of salt (or two). Grind over black pepper and add a pinch of cumin adding more if needed. Give everything a good mix together, taste and adjust as needed. Adding more lime, salt or cumin. Enjoy!
